Frosting Tips for the Summer Months

Oh I am a bad blogger, nothing has been updated for ages.....so I am going to give you some summer frosting tips for all you bakers.

First the bowl: I will give my mixing bowl a icey cold bath on the outside. Just running some cold water on the outside cools the bowl enough that while mixing the frosting will stay solid. This is really helpful in the summer while it is warm. Has saved many cream cheese frostings over the years when it is warm. It may take a little longer to mix but worth the wait.

Second: Replace some of the butter with shortening. Now let me tell you...I hate shortening. Its weird & I alway just real butter in my frosting. In my cake decoration class all we used was a shortening based frosting, I hated it. Butter flavor just is not the same as the real thing. Now it does give you the true white coloring if you are looking for that but I will take a cream unless asked ( :

But if I do have an event where the cake/cupcakes are going to sit outside I will replace a few tablespoons of the butter with shortening to help it hold up.

Third: Keep the cakes in the fridge for a bit will save your frosting BUT don't serve cold. Bring to room temp, no one likes a cold cake!
